My Favorite Lasagna

I think that this is the perfect family dinner dish. Its fun to make together but easy enough to make on your own! The layers make the dish, and with all the flavor in the layers… You can imagine this will be something you make again and again!

  • 1 box lasagna noodles
  • 1 batch meat sauce
  • 15 oz Ricotta
  • 1 cup Fresh Basil, chopped
  • 1 cup Parmesan, grated
  • ½ cup Fresh Parsley, chopped
  • 2 tbsp dried Thyme leaves
  • 2 tbsp dried Oregano leaves
  • 1 egg
  • Salt, to taste
  • Pepper, to taste
  • 4 cups Mozzarella, shredded
  • Ingredients for Meat Sauce:
  • 1 celery stick, finely minced
  • 1 large carrot, finely minced
  • ½ onion, finely minced
  • 3 cloves garlic
  • 1 tbsp Olive Oil
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 can Tomato Paste
  • 1 cup Red Wine (any non-sweet type is cool!)
  • 1 can diced tomatoes
  • Salt, to taste
  • Pepper, to taste

You will want to begin this recipe by making your sauce, it takes the longest because you want to let it simmer awhile to get a really delicious flavor. To begin, you will want to have a sauce pan that has a lid. Heat your saucepan over medium heat and add in your olive oil. After a few seconds, add in your minced carrot, celery, onion, and garlic. Saute these until the veggies are soft. Add your ground beef and pork to the saucepan. Brown the meat. Make sure you brown the meat really well with the veggies to get better flavor. When meat is fully cooked, add in your tomato paste. This you will want to make sure is fully mixed in and then continue to saute for 5 minutes. You want to give the tomato paste time to brown. Next, add in your Red Wine. Again make sure the wine is mixed in thoroughly, then wait for all of liquid to cook off. You want to get back to a basically dry mixture. Once all the wine has cooked off, add in your can of tomatoes. Season with salt and pepper to taste. At this point your sauce is done, but let it simmer while you get everything else ready! At this point, pre-heat your oven to 400 degrees.

The rest of the layers come together pretty easily. You will want to cook your noodles according to the directions. If you have “oven ready” noodles, don’t forget that will change how you have to cook the lasagna later… I suggest the kind you boil beforehand. For your ricotta mixture, you will add your Ricotta, Parmesan, Basil, Parsley, Oregano, Thyme, Egg, salt and pepper to a bowl and mix. It is that easy!

Now that all the layers are ready, it is time to put them together! Add a thin layer of meat sauce to the bottom of your 9×13 baking pan, then add your first layer of noodles. On top of the noodles, add a layer of ricotta, then mozzarella, then meat sauce, and then finally top with another layer of noodles. Continue in this fashion until you place the last layer of noodles. On the very top you can add a layer of ricotta and mozzarella. When the lasagna is ready, cover with aluminium foil and place in the oven. Bake for 30 minutes with foil on and then for the last 15 minutes, remove the foil. When you take out the lasagna, it will be ready to serve! Enjoy!
